Greek Mushrooms Red Quinoa Salad
First rinse the quinoa. In a pot add the water and the quinoa and bring to a boil. Cover, turn down the heat to low and cook for 20 minutes. Let it cool completely.
In a small bowl, whisk together the olive oil, lemon juice, honey and pepper. Set aside.
In a large bowl toss the mushrooms , cucumber, olives, feta cheese, tomatoes and red onion together. Add cooled quinoa and dressing and toss.
